Eleanor P. Ernst, 87, formerly of Bethlehem, passed away Saturday, June 22, 2013 at Saucon Valley Manor in Hellertown. She was the wife of the late Mahlon L. “Ernsty” Ernst, who passed away in 2002. Born in Bethlehem, she was the last of 7 children born to the late Harvey and Lizzie (Anthony) Lutz. She and her husband were the owners of Ernstys Café in Salisbury Township. Eleanor also enjoyed quilting, knitting and sewing. Survivors: Son, Robert Ernst and his wife Diane of Macungie; daughters, Carol Ziegler and her husband Carl of Hellertown and Debbie Mink and her husband Dwayne of Bethlehem; son-in-law, David Bibighaus of Salisbury Twp.; 11 grandchildren, Lori, Robert, Jr., Christina, Richard, Amy, Kyle, Jesse, Matthew, Sean, Candice and Carli; 4 step-grandchildren and their families; 4 great-grandchildren; and 2 great-great-grandchildren. Eleanor was preceded in death by her daughter Peggy J. Ernst-Bibighaus, grandson Gary Gebhart, sisters Edna, Madelyn and Dorothy, and brothers Samuel, Willard and Johnny.
