Stephanie Lynne Callahan, 47, of Granite Quarry, NC passed away December 10, 2022 at Rowan Regional Medical Center. Her family was with her when she passed away.
She was born in Davenport, Iowa the daughter of Gene and Connie Schimpf.
She graduated from Michigan State University with an Animal Science degree in 1998, and an Elementary teaching certification from UNC Asheville, NC in 2002. She started her career teaching and then went to work for Carrier Corp. She was a huge Michigan State football and basketball fan, rooting for Sparty was one of the great joys in her life. She enjoyed reading, news, and politics.
She married Chris Callahan, in 2004. She was a wonderful, and caring wife who brought Chris so much love and joy. She had a fantastic sense of humor, an infectious smile, and was famous for her hugs. She loved her dogs, Snickers, the dog she grew up with; Baxter, the dog she got when she was married; and Duke, the dog she loved until she died. She was diagnosed in 2008 with a Mitochondrial disorder (MELAS). She handled her disability with class and dignity, which was admired by all. She understood how precious life was and lived each day to the fullest.
She is survived by her husband Chris, her parents Gene and Connie Schimpf, her in-laws Mike and Bernice Callahan, sister-in-law Sara Snow (Eric) and nephew Jake and niece Ally Snow.
