Eric owned and operated several businesses including the Golden Corral Restaurant, Rockhouse Grille and Computer Specialties in Hobbs. A lifelong tinkerer, he could fix your bicycle, motorcycle, or computer. He enjoyed life at every turn cherishing the time spent on his Harley Davidson, even naming his daughter Harley. The long rides paused for a time when he wrecked the bike on a twisting mountain road breaking his wrist in 1995. He played Guitar in an 80’s Rock and Roll band for a time and music never failed to light up his face. His last Christmas list included a new guitar and additional speakers for his home sound system.  Fast cars were a thing including the one he used in teaching Casin to drive, a four speed Mustang with a roaring exhaust. He loved camping and a campfire always tending the fire and camp cooking. He was dubbed by his family: “Best Cajun Cook this side of Louisiana”.

He was a fighter, fighting off two bouts of Cancer in 1997 and 1999. He received 22 straight “All’s Clear” reports from M D Anderson Cancer Center in subsequent years.
