Carol was born the daughter of the late Gerald E. and Dorothy E (Baker) Cook on Thursday, December 25, 1947, in Irondequoit, NY. She grew up in the Irondequoit area, attending Irondequoit schools. After high school, she moved to California to study equestrian science.

Carol returned to New York and spent her life raising, training, and racing horses. She was among one of the first female jockeys at Finger Lakes Race Track. Carol enjoyed reading, cross-country skiing on her property, attending all her grandchildren’s sporting events, and spending time with her horses.

Carol will be remembered by her son, Gerald (Nichole) Griffith; grandchildren Aidan, Alyssa, Justin, and Arya Griffith; brother, Richard Cook; brother-in-law, James Newman; sisters-in-law, Sue Cook, Ida Cook, and Barbara Cook; several nieces and nephews.

Carol was predeceased by her siblings Mary Jane Newman, Michael E. Cook, William D. Cook, and Robert T. Cook.
